Traditional cold brew takes 12 to 24 hours to steep — and it starts losing its edge within a week of opening. We brew ours hot, the proper way, then flash-chill it immediately to lock in more flavour from the bean than slow cold-steeping ever could. Then we seal it in a bag that keeps air out as you pour, so the cup you have three weeks from now tastes like the first one.
